This is a simple stress free favorite from my TMG Sister Sherrill, for a holiday morning or the day after..
often with guests over, you can just lounge in the morning and enjoy the start to your day, and serve up a
wonderful healthy breakfast, right out of the hot cooker. And the smells that your guests will wake to will warm their hearts.

Slow Cooker Breakfast Casserole

16 oz. frozen potatoes (or frozen Simply Shreds)
8 oz. cooked lean ham, diced
1/2 C onion chopped
1/4 C green pepper, chopped
1/4 C red pepper, chopped
3/4 C low-fat (2%) shredded cheddar cheese
4 oz. fat-free egg substitute
1/2 C 1% or non-fat milk

optional garnish: Diced Tomatoes, Chopped Green Onions, and Fat Free Sour Cream


Spray crock-pot with cooking spray. Layer 1/3 of each ingredient (ham, onions, cheese, potatoes) in crock-pot. In bowl, mix egg substitute, milk and (salt/pepper to taste). Pour over layers in crock-pot. Cook 8 hours overnight on LOW. This recipe can be easily doubled (increase cooking time for doubled recipe to 8-10 hours.)

Suggested toppings after cooked. Diced Tomatoes, Chopped Green Onions, Fat Free Sour Cream for 0 add'l POINTS*!
