Mojito Shrimp Skewers and Brown Rice
Ingredients:
1 shallot, peeled, trimmed, coarsely cut chunks
1/4 cup fresh mint, coarsely cut
1/8 cup rum
1 tablespoon lime zest, freshly grated
1/4 cup lime juice
1 tablespoon honey
1 tablespoon olive oil
light shake of kosher salt
1/2 pound shrimp, uncooked, peeled, deveined, tails on, rinsed
1 cup Trader Joe's Organic Brown Rice, freezer to microwave bags
Directions:
Mojito Marinade:
I love my Magic Bullet processor for this tiny task... Drop into the processor cup the shallot, mint, rum, lime zest, lime juice, honey, olive oil, and salt. Pulse until shallots are finely chopped. Pour the marinade into a shallow baking dish or a 1-gal sealable plastic bag for marinating your shrimp (or chosen protein). Dispose of unused marinate.
Shrimp Skewers:
Pre-heat Grill to high temp.
Skewer shrimp onto bamboo skewers. Marinate Shrimp Skewers for 20-30 minutes. Place skewers direct onto hot grill. Grill skewered shrimp for approx 2-3 minutes and then flip with tongs
and repeat.
Brown Rice:
Follow pkg instructions. Microwave on high for 3 minutes. Measure 1/2 cup rice,and plate. Top rice with half of the shrimp skewers. Garnish with Fresh Mint Leaves and Lime Slices.
