Mashed Potatoes with Cauliflower and Squash

You will be truly suprised what a wonderful and creamy, almost buttery taste that you will have with this
"extended" mashed potato dish. Adding butternut squash and cauliflower makes a 1/2 cup serving
the best tasting side dish at your Thanksgiving table.... and only 1 POINT® value 1*

 
  Squashed (Mashed Potatoes) Taters


ACTIVE TIME: 10 minutes
TOTAL TIME: 20 minutes
EASE OF PREPARATION: Easy

1- Pkg (16oz) Frozen Butternut Squash - cubed
1 - Pkg (16oz) Frozen Cauliflower - chopped
2 - Med (5.3oz) Russet Potatoes - cubed
1 to 2 - Garlic Cloves - chopped finely
2 - Tbls Fat Free Half & Half
Salt/Pepper

Instructions:

Boil and Simmer chopped potato, sqaush cubes chopped cauliflower and garlic cloves till tender, approximately 20 min.
Drain, and put back into the drained pan and let them dry on the stove for a few minutes on low heat.
Mash well till smooth. A kitchen Aid mixer works well for this.

I did not use butter or sour cream when I made this. If you want you can add them if you think it needs it.

Season with the salt and pepper, adding more if desired.
